Abstract Edible oil is an essential ingredient in every kitchen for culinary purposes and oil is having industrial usages as well. This is derived after crushing and processing of oilseeds, which various types are groundnut, soyabean, rapeseed, mustard seed, sesamum, sunflower, Nigeria seed, castor, linseed, taramira, lemon grass, coconut, cotton seed, poppy seed, shea nut, etc. Even though India is a leading country in the production of oilseeds, both oilseeds and edible oil, particularly edible oil, in huge volume are imported to cater to people need. Produced oilseeds are not similar in productivity level, further it varies seasonally, there are variations among states and union territories as well as in its conversion rate, cost of production and provision of minimum support prices. From these perspectives, this paper makes an attempt to study various types of oilseeds and oils, their export import status alongwith inter-state disparities in its production and consumption.
