Studies on RTS Preparation from Aonla (Emblica officinalis), Rangpur Lime (Citrues × Limonia) and Ginger (Zingiber officinale Rose.) Blends

Abstract

The present investigation was carried out at Post Graduate Laboratory of Department ofFruit Science, College of Horticulture and Forestry, A.N.D. University of Agriculture & Technology, Kumarganj, Ayodhya (U.P.) during the year 2019-2020. Aonla, rangpur lime andginger have nutritional, spicy, medicinal and therapeutic values. 10 per cent of blendcomprising 40 per cent aonla juice, 50 per cent rangpur lime juice and 10 per cent ginger juicewas found best by the panel of nine semi trained judges including males and females on 9-pointhedonic scale for the preparation of RTS with 13 per cent sugar, 0.20 per cent acidity and 70 ppm SO2 than other blend combinations viz., 33.33, 33.33 and 33.33 per cent (T1); 20, 70 and 10 per cent (T2); 30, 60 and 10 per cent (T3); 50, 40 and 10 per cent (T5); 60, 30 and 10 per cent (T6) and70, 20 and 10 per cent (T7), aonla juice, rangpur lime juice and ginger juice, respectively. Duringthe storage period Total Soluble Solids, acidity, reducing sugars and total sugars increasedwhereas, vitamin-C, non-reducing sugar and organoleptic score decreased with theadvancement of storage period into glass bottles. The RTS was organoleptically acceptable up to4 months of storage at ambient condition. This study indicated that aonla, rangpur lime andginger can be utilized for valuable RTS beverage making which can be beneficial for theconsumers in terms of taste, colour, flavour, medicinal and therapeutic properties.
