Chalky rice degrades the value of rice because of the undesirable appearance in rice. The chalky ricedeterioratesthe eating quality, as it absorbs water more rapidly during cooking. Traditionally the chalkiness evaluation was performed by expert persons. In this paper, we proposed an automatic evaluation technique for chalkiness and suggested a prototype for classifying the good and bad quality of rice kernel using image processing.
