Online published on 3 February, 2021. Abstract Four strains of yeast viz. Saccharomyces cerevisiae MTCC 11815, KY069279 Meyerozyma caribbica PY1 and S. cerevisiae D7, a commercial strain, were evaluated for their growth kinetics on GYE and honey based yeast extract (HYE) broth. Observation of variations in yeast behaviour on different substrates led to the selection of the yeast strain S. cerevisiae MTCC 11815 and KY069279 as the best suited strains for growth on GYE broth and HYE broth, respectively. The study of yeast growth dynamics on the basis of absorbance measurements, viable cell count and consumption of reducing sugars served as a valuable method for accurate understanding of yeast growth kinetics on different substrates.
