Recovery of edible meat from filleting waste of marine reef cod (Epinephelus chlorostigma) and its quality assessment Reddy A. Manjunatha, Bhandary M. Abstract The protein content of recovered meat from marine reef cod (Epinephelus chlorostigma) ranged from 14.87 -24.09% based on the method of separation The moisture, fat and ash contents ranged from 68.66 -79.05, 2.12 -4.04 and 2.5 -2.73% respectively. The values for TVBN, TMA, FA, PV and total plate count of recovered meat indicated that the meat was of good quality. Yield of meat differed from 17.70 -19.55% of the filleting waste, based on the method of separation. The meat picked form eviscerated frame after boiling was found to be of better quality.
