Abstract Fruits and fruit products are susceptible to spoilage by Alicyclobacillus, which are gram-positive, rod-shaped, endospore-forming bacteria. Alicyclobacillus produce guaiacol which give off-flavour to the fruits and fruit products, affecting their quality. During present study, samples of fruits and fruitproducts of mango, guava, banana, and pomegranate, were collected from the local market and from them the species of Alicyclobacillus were isolated, and its growth characteristics were studied. The presence of guaiacol was enzymatically detected using commercially available kit and through highperformance liquid chromatography (HPLC). Three isolates of Alicyclobacillus viz.
