Sensorial quality of low-calorie sheerkhurma made with stevia blend sugar powder

Abstract

Present investigation was undertaken to prepare sheerkhurma with the different levels of Stevia blend sugar powder viz. 1.5, 2 and 2.5%. The samples of different treatments were analyzed for Sensory qualities (colour and appearance, flavor, body and texture, and overall acceptability). Sheerkhurma containing 2% stevia- blend sugar powder was found to be at par with control.
